These aren't like those quaker oats bars at all but it seems like they are devoured in our house quicker than I can make them!
This recipe is great because it uses all healthy ingredients and you can vary it easily. There are a few ingredients that you will have to get at a natural foods store but it's worth it.
1/2 cup pitted dates (about 10 dates)
1 1/2 cups gluten free rolled oatmeal
1 cup gluten free brown rice crisps
1/3 cup sunbutter
1/2 cup honey
1 teaspoon vanilla
1/2 cup dark chocolate chips (I like the mini ones because they blend better but I've used all kinds)
1/2 cup unsweetened coconut
Sometimes I even do a chocolate drizzle on the top (just chocolate chips melted with a little bit of coconut oil).
And I add natural peanut butter chips to the top. PEANUT BUTTER BARS! YUM.

I love homemade granola bars! I haven't made chewy bars in so long, and yours look fantastic! I love the chocolate drizzle :)
