Whole30 Day 30

Breakfast:

Two eggs, spinach, and fresh garlic cooked in ghee.  Plus avocado.

Lunch:

Leftover pizza meatloaf and cauliflower rice.

Dinner:

Beef, peppers, onion, grated sweet potato, and taco seasoning cooked in coconut oil.  Plus and egg added when everything was done.  Topped with fresh salsa and avocado.  I could eat this every single day!

Exercise:
Back at the gym tomorrow.... I hope.

How I feel:
My kids woke up much better.  Yesterday was bad.  So bad emotionally.  Today was the total opposite.  I felt like I got so much accomplished.  It was a great ending to my Whole30!

RECIPE: Paleo Coconut Shrimp



Paleo Coconut Shrimp

15 medium shrimp cleaned
1/2 cup almond flour
1/2 cup shredded unsweetened coconut
1/2 teaspoon salt
2 beaten eggs
1/4 cup coconut oil

Melt the oil in a pan at medium heat.  Mix the almond flour, coconut, and salt together in a shallow bowl.  Bread the shrimp by dipping each one into the eggs and then the almond flour/coconut mixture.

Fry until both sides are golden brown.

I also made a dipping sauce consisting of 1/4 cup full fat coconut milk and 1/4 cup crushed pineapple.  I made it ahead of time and left it in the fridge for a few hours.

I want those shrimp again right now!

Whole30 Day 28

Breakfast:

Last night's dinner was so good that I had to recreate it for breakfast!



Here's how I did it:

I started with a frozen pepper/onion mix that I keep in the freezer.  I let it cook for awhile in coconut oil and then I added probably a cup of grated sweet potato and a leftover grass fed beef burger.  While that cooked I mixed up two eggs, sliced my avocado, and got the salsa out.  I added the eggs and when everything was ready I topped it with salsa and avocado.


Lunch:

I had an avocado that was overly ripe so I pretty much ate a whole avocado today.  I mixed half with a can of tuna plus relish and mustard.  I also roasted some carrots.  Can you tell I need to go grocery shopping?

Dinner:

Dinner was steak, sweet potato (with ghee and coconut) and watermelon at my parents house.  We all agreed that every Sunday night should be steak and potatoes!

Exercise:
Remember how I said how the combat run wasn't so bad?  I kind of regret that statement... Can I take it back?  I'm hurting... Everywhere.  I have multiple purple bruises that I don't even remember getting!  I even have one on my forehead!  And my triceps are killing me!  No exercise today!

How I feel:
Today for some reason I feel really bloated.  It's making me feel like I've gained weight... Too many sweet potatoes?  Just hormonal?  What are your thoughts?  I haven't eaten anything abnormal.

Whole30 Day 27

Breakfast:

Eggs, a leftover burger, peppers, onions, and spinach.

Lunch:

Ground pork, broccoli, carrots, and pineapple.

Dinner:

I was seriously craving comfort food tonight so I made the best mexican bowl thingy ever!  Leftover burger, grated sweet potato, peppers, onion, garlic, and taco seasoning all sautéed in coconut oil.  Then I added two eggs and topped everything with fresh salsa and avocado.  


I ate it with a spoon.  Ahhh you guys gotta try this.  The sweet potato almost tasted like cornbread!

Exercise:

If you aren't on instagram you missed my combat/mud run pictures.  Me and three other ladies ran a 5k mud run this morning.  Holy cow.  Strength wise it wasn't too bad.  There were tires (soooo many tires), box jumps, 4, 6, and 8ft walls, and a pretty hilly area to run.  There was also a lot of water.  Like go under and swim water... As you can see in the pictures above there was even a drainage pipe we had to climb through.  The water was the hardest because it was SO cold.  There was even a ditch with added ice to swim through.


It was a lot like the Color Run... Something I'll never forget and would do over in a heartbeat!

How I feel:
Good!  Better than yesterday.  I have ups and downs.  Somedays I just want a little bit of freedom.  Other days I like how strict I am being.

Whole30 Day 26

Breakfast:

Leftovers!  I'm loving steak and eggs for breakfast/dinner... umm whenever!

Lunch:

This bowl is as simple as it looks.  Cauliflower rice, ground pork, broccoli, carrots, and pineapple cooked in coconut oil.  Drizzled with coconut aminos.  Things don't have to be complicated.

Dinner:

This has quickly become a Friday thing.  A burger, a hotdog, kraut and sweet potato fries with coconut butter.  I totally had another SWYPO moment with Josh's cauliflower tortillas.  I just wanted to try them so bad.  So I made a little blanket for my burger... Blanket sounds so much better than bun.  They are awesome by the way.

Exercise:
I kept the kids home today all day to recoup.  We are starting fresh on Monday- school and gym!

How I feel:
I felt a little anxious today for this all to be over with.  It was kind of a weird feeling.  Maybe I was feeling a little too restricted today.

Whole30 Day 25

Breakfast:

It was a SWYPO kind of breakfast... and honestly I didn't care.  I mixed two eggs with a mashed banana and cooked it in ghee.  It was so good.  I cannot wait for paleo pancakes!

Lunch:

The last sweet potato!  Plus I had an unpictured coconut cream larabar an hour after this.

Dinner:

Steak and eggs!  Plus roasted asparagus.

Exercise:
I did about a 30 minute back workout at the gym before the kid care came to get me because LB puked all over. Nice.

How I feel:
I feel good about the Whole30 but y'all I've been stressed.  My sister bought me a giftcard at a spa for my birthday and I got an hour long massage today.  I didn't want to leave the spa.  I feel drained.  Blah.

Whole30 Day 24

Breakfast:

I stood in the kitchen this morning for awhile debating what to make.  I really really wanted a paleo pancake this morning.  I thought about making one and then mashing it up in a bowl.  I stuck with eggs, spinach, garlic, and ghee.  


Mid morning I had two little clementines.



Lunch:

Just a repeat reheat... No veggies on the side.  I'm a rebel.

Mid-afternoon I made almond milk so I ate a couple soaked almonds.


Dinner:

I dumped three containers into one for dinner.  Cauliflower rice, broccoli, chicken, and avocado.  I was headed out the door for a girls get together.  They had a baked potato bar and salad.  I ate some of the salad and it was whole30 approved.  It will be nice when I can bend just a little bit and let some things slide.  I could have eaten a plain potato...

Exercise:
An hour of body combat.

How I feel:
I was really really moody today.  I wanted to cry at every little thing.  Weird.

Whole30 Day 23

Breakfast:

I started with ghee (maybe a tablespoon?) and melted it in a pan.  I added one grated garlic clove and a big handful of spinach.  I let it cook for a minute or two and then added three whole eggs.  Breakfast!

Lunch:

A repeat reheat!

After lunch we went to pick strawberries.


Summer is coming!


I am so excited for summer produce!


Afterwards we stopped by Starbucks.

I bring my reusable $1 cup with homemade almond milk in it.  The employees know me so they know the deal.  At first they kept trying to dump out the almond milk.  After me freaking out a few times they figured it out...

Plus we fed the seagulls!


Dinner:

Oh I'm loving the mish-mosh bowls.  Cauliflower rice, broccoli, and leftover steak.  Topped with half an avocado.

Exercise:
None... Man I need to lift something heavy.  Tomorrow tomorrow tomorrow.

How I feel:
So Tiffany said awhile ago that she felt like she needed "something special".  What is that feeling all about?  I had it today so I got a coffee.  It satisfied that feeling.  Anyone know why I felt that way?

Whole30 Day 22- Week Three Check In!

First let's check in.

This week was rough with the kids... Do I say that every week?  I had a sick kid all week long and it's still continuing.  We went to the doctor today by the way.  Food wise I did awesome.  I was stressed and I didn't want food.  That's huge!  I am feeling better, sleeping better, my skin is better, and I know I've lost weight.  I kind of don't want to end this thing.

Breakfast:

Three eggs, broccoli, peppers, and onions cooked in ghee.

Lunch:

Chicken salad (chicken, avocado, grapes) on spinach and some overdone kale chips.  That was such a great combination!  The grapes, avocado, and shredded chicken.  I also added some onion powder, garlic powder, salt and pepper.  You gotta try it!

To pay attention to my kale chips!  They got a little crispy.

Dinner:

Speaking of those guys...


These were awesome.  I made PaleOMG's turkey stuffed twice baked sweet potatoes around lunch time for dinner.

They reheated well and were so good.  If you haven't bought Juli's cookbook you should.


Plus I made roasted asparagus.  Such a simple and delicious meal.

Exercise:
None.

How I feel:
Felt a little blah today.  I woke up in a funky mood.  Not all days will be perfect...  I did have a great day of eating though.  Everything was satisfying!

Whole30 Day 21

Breakfast:

Breakfast was simple because I was short on time.  I just scrambled three eggs in ghee.  Plus coffee and almond milk.

Lunch:

The final leftover burger with sautéed onions, mushrooms, and garlic.  Plus greens with avocado, carrot, balsamic vinegar, and olive oil.

Dinner:

Dinner at my parents... Two grilled pork chops and a big sweet potato with coconut butter and sunflower seed butter.  No greens but this is just what I wanted.  It hit the spot!

Exercise:

I ran a 5k this morning with my sister.  It was rough!  The wind was SO strong and was in our faces for the first two miles.

How I feel:
So today I noticed how much I'm really enjoying food.  The flavors and textures amazed me today.  I know that might sound a little strange.  The onions I ate on that burger were so sweet... Almost candy like!  I guess my tastebuds are adjusting.

Whole30 Day 20

Oh man did I have a day that tested my emotional status with food.  I had my day all planned out perfectly because I knew it was going to be a busy one and everything ended up all messed up.

I had to take both kids and a hurt dog to the vet first thing this morning at 7:45. I'm not sure what happened but one of my dogs had a big puncture wound on her face (I'm guessing it was from one of my other dogs).


While the vet was putting staples in her face...

My four year old was puking in a trash can in the room. My two year old was running wild through the vets office and next door to us they were euthanizing a dog. It was crazy.  I debated putting those pictures up but if you are at all in to animals or science you'll probably like them.  Plus I've already put pictures of my kitties amputated leg.

We had two birthday parties to go today (ahhh that's so mom like!) and we attempted one. Squirrel ended up spending the rest of the day on the couch with a stomach bug. I am praying praying praying that LB and I don't get it.

One great thing about my day is never once did I want crappy food.  That is HUGE y'all.  I'm a stress eater.  Not really an emotional eater.  If I get sad I actually lose my appetite.  But if I'm stressed I'll shove anything and everything in my face.

Here's what I did eat today:

Breakfast:

I took leftovers and added two eggs!  YUM!

Lunch:

I was strapped for time and mental capacity so I just ate more leftovers.  Straight out of the jar!

Dinner:

Oh wait how about some more leftovers!  Ha!  This time I added a grass fed beef hotdog and greens tossed with olive oil and balsamic vinegar.  This was awesome.

Exercise:
I planned on going to the gym today but that didn't happen.

How I feel:
Right now I can barely keep my eyeballs open.  I'm tired both physically and mentally.  Caring for a sick kid is tough.  Especially if you have another kid that's not sick and bouncing off the walls.  I am proud of myself for not turning to food for an emotional crutch.  Serious progress.
