My Favorite Paleo Meals

I love using my blog as a resource.  Whenever I need meal ideas I come here.  I've posted so many of my meals that sometimes I have a hard time finding what I need.  By making this page this puts everything in one place making it easy for me to find things and hopefully giving you a good place to come to when you need ideas.  Come back because this page will be updated frequently with more ideas!

Taco Salad Obsessed

Breakfast:

Paleo pancakes (the one with almond flour), topped with almond butter, banana, and salted cinnamon coconut chips.



Lunch:

Leftover taco salad.  This is one of the easiest meals ever and we've been pretty much obsessed with it lately.  Most of the time we just brown up some grass fed beef.  Sometimes we do brisket or a pork shoulder in the crockpot with taco seasoning.  We put it on romaine and top it with guacamole (just a mix of avocado, garlic powder, salt, lime juice, and tomato).

Snack:

Tis the season!  Honeycrisp!

Dinner:

Sunday is burger night in our house.  Grass fed beef, paleo mayo, pickle, ketchup, pastured bacon, and lettuce all on a sweet potato latke (another thing I'm loving right now!).

NO RECIPE: Paleo Breakfast Hotdogs

Am I really blogging about this?

I posted this picture on instagram a few days ago and the response was surprising.


As I was making that little afternoon snack I realized that I do eat in a strange way.  I mean seriously... chicken sausages wrapped with a mashed banana mixed with an egg topped with sunbutter...  Weird.

Since then I've already made this twice.  The flavor combinations are actually really delicious! Plus they are easy to make and it's something different.  I get tired of eating eggs every morning.

So here's how I made them.

I put two of these guys in a pan with some coconut oil.


Then I make a batch of paleo pancakes and split the batter in half.

I make everything in the same pan for easy clean up.

When the pancakes are done I spread them with sunflower seed butter.


Then I roll up the chicken sausage.


They'd also be really good drizzled with some pure maple syrup...

RECIPE: Paleo Asian Meatballs



I hate recipes that have a million ingredients.  Seriously, if it has more than like 5 ingredients I move on.  This recipe may look complicated but it's really not.  When I made these last night for dinner I couldn't believe I hadn't posted this already.  These meatballs might be my husbands favorite paleo meal!  He asks me to make them all the time so they frequent our meal planning lists.


Zucchini Noodles With Asian Meatballs- makes about 12 meatballs
(I adapted this recipe from Skinnytaste to make it paleo)

Meatballs
1/4 cup almond flour
1lb ground turkey or pork
1 egg
1t ground ginger
1 clove garlic minced
1/2t salt
1T coconut aminos
2t sesame oil

Sauce
4T coconut aminos
2t sesame oil
2T fresh lime juice

Noodles
4 zucchini
coconut oil

Mix everything together for the meatballs.  Form into meatballs and put them onto a baking sheet lined with parchment paper.  Bake at 500 for about 15 minutes or until cooked through.


While the meatballs are baking use a spiralizer to cut your zucchini into noodles.  Don't have a spiralizer? Just chop it up however you want.  


Add about a tablespoon of coconut oil to a pan set on medium heat.  When it's hot add the zucchini.  As soon as it starts to soften add your sauce mixture.  Toss the zucchini in the sauce and cook for about 3 minutes or until soft.  Serve with meatballs on top.


*You could really use any veggie in place of the zucchini.  Broccoli, carrots, mushrooms, cauliflower rice... Any of them would be good cooked in that sauce!

WIAY

What I ate yesterday.

Breakfast

An almond flour paleo pancake topped with sunbutter, coconut, and banana.  Plus coffee with coconut milk.

Lunch

Paleo chicken salad in a paleo wrap!  Those little guys are GOOD!

Plus a seltzer water.


Dinner

Stir fry- turkey burger, broccoli, carrots, cauliflower rice, and coconut aminos.

Not pictured- a protein shake and a handful of popcorn.
