Three Paleo Treats

I'm not going to lie... As soon as it was May 1st I went a little crazy on paleo desserts.  There was no gradually letting them in.  I had a dessert after every meal- LoveBean fudge cream for breakfast, Hail Mary Macaroons for lunch, and Paleo Treats for dinner.  When I went to bed on May 1st I had a terrible stomach ache.  I woke up in the middle of the night with a killer headache.  It definitely was not worth the pain.

I did do a little review though of these popular paleo goodies.

Hail Mary Chocolate Macaroons

I saw these at a local health food store during my Whole30 and picked them up to put in the fridge for later.  These were my favorite of the three desserts I inhaled the other day.  They are super chocolatey and are bite sized.  I want to find the caramel sea salt!

Paleo Treats

I ordered one of each Paleo Treats because I saw Juli rave about the cocao now on her blog- mustang bar, brownie bomb, cocao now, and mac attack.  Honestly, I didn't like any of them!  Juli's desserts are much better.  Plus these were super expensive!

Lovebean Fudge Cream

When I ordered this I bought two jars.  One for me at home and one to send to my husband.  He loves it and so do a bunch of guys in his squadron.  I can only imagine what a couple marines standing around sharing a vegan jar of fudge cream would look like... This stuff tastes like Betty Crocker chocolate fudge icing.  I love it, my husband loves it... and my kids fight over it.

While these paleo desserts were pretty good they were all very expensive.  I'm not quite sure if they are worth the money.

Whole30 Recap

First of all... I did not cheat.  I did not eat a single bite of processed food, preservative, sugar... nothing.  I even steered clear of anything with "natural flavor" in it.  I didn't eat out for 30 days in fear of something not being compliant.  I'm an all or nothing kind of person.  Can you tell?

For the entire month of April I barely went to the gym.  I had sick kids most of the time and sick kids equals no kid care for me.  I was really hoping to moderate a fitness side to the Whole30 but I really didn't get the chance.

What I learned about myself:

• I am a stress eater. Anytime I am stressed I want food. Even if it's a banana. I don't think that will change. I might need to let myself just have a banana. It's better than a cookie.

• I missed paleo pancakes from day one to day thirty. I just like them mmmk?

• I had a serious sugar addiction and I feel pretty in control of it now... however, I'm not sure if I'm ready to let sugar back into my diet full force.  It will definitely be moderated closely.

• I noticed my body wanted a special "treat" at certain times of the day.  It was the same times everyday.  Right when I wake up, mid afternoon (usually around 2), and right before bed.  I'm still unsure as to what causes it (it isn't stress) or how to fix it.  Habit?

What now?

I'm actually going to pretty much continue doing what I'm doing.  I'm addicted to the compliments on how great I look, how great I feel, and the results.  I am definitely going to incorporate paleo pancakes, bacon, popcorn on Friday, and a couple of sweet treats back in.  I have several sweet paleo products in my house right now and I can't wait to try them- LoveBean Fudge Cream, Hail Mary Macaroons, and Paleo Treats.

It will also be nice to be a little more social.  I didn't eat out at all so there were several times this month where I watched people eat out.  It kinda sucked.

I have no desire to add grains, legumes, or dairy back in to my diet at all.  There's no reason for it.

June will be another Whole30 for me so if you missed April plan on June and I'll do it with you!

Whole30 Day 30

Breakfast:

Two eggs, spinach, and fresh garlic cooked in ghee.  Plus avocado.

Lunch:

Leftover pizza meatloaf and cauliflower rice.

Dinner:

Beef, peppers, onion, grated sweet potato, and taco seasoning cooked in coconut oil.  Plus and egg added when everything was done.  Topped with fresh salsa and avocado.  I could eat this every single day!

Exercise:
Back at the gym tomorrow.... I hope.

How I feel:
My kids woke up much better.  Yesterday was bad.  So bad emotionally.  Today was the total opposite.  I felt like I got so much accomplished.  It was a great ending to my Whole30!

RECIPE: Paleo Coconut Shrimp



Paleo Coconut Shrimp

15 medium shrimp cleaned
1/2 cup almond flour
1/2 cup shredded unsweetened coconut
1/2 teaspoon salt
2 beaten eggs
1/4 cup coconut oil

Melt the oil in a pan at medium heat.  Mix the almond flour, coconut, and salt together in a shallow bowl.  Bread the shrimp by dipping each one into the eggs and then the almond flour/coconut mixture.

Fry until both sides are golden brown.

I also made a dipping sauce consisting of 1/4 cup full fat coconut milk and 1/4 cup crushed pineapple.  I made it ahead of time and left it in the fridge for a few hours.

I want those shrimp again right now!

Whole30 Day 28

Breakfast:

Last night's dinner was so good that I had to recreate it for breakfast!



Here's how I did it:

I started with a frozen pepper/onion mix that I keep in the freezer.  I let it cook for awhile in coconut oil and then I added probably a cup of grated sweet potato and a leftover grass fed beef burger.  While that cooked I mixed up two eggs, sliced my avocado, and got the salsa out.  I added the eggs and when everything was ready I topped it with salsa and avocado.


Lunch:

I had an avocado that was overly ripe so I pretty much ate a whole avocado today.  I mixed half with a can of tuna plus relish and mustard.  I also roasted some carrots.  Can you tell I need to go grocery shopping?

Dinner:

Dinner was steak, sweet potato (with ghee and coconut) and watermelon at my parents house.  We all agreed that every Sunday night should be steak and potatoes!

Exercise:
Remember how I said how the combat run wasn't so bad?  I kind of regret that statement... Can I take it back?  I'm hurting... Everywhere.  I have multiple purple bruises that I don't even remember getting!  I even have one on my forehead!  And my triceps are killing me!  No exercise today!

How I feel:
Today for some reason I feel really bloated.  It's making me feel like I've gained weight... Too many sweet potatoes?  Just hormonal?  What are your thoughts?  I haven't eaten anything abnormal.
