Meal Plan #2

I’ve had one of the best weekends I’ve ever had. The funny thing is we didn’t do anything!

Weekends for me always seem to be full of things I don’t really want to do. BBQ's at someones house, birthday parties, chores, mowing the grass… There are two things I actually like to do on the weekends. Spend time with my family and do some prep for next weeks meals.

DINNER:

Y’all we are on a roll with our meals! I have loved having our meals planned out this week. Our two favorites from the week were Friday and Saturday's dinners.


Last night we had steak, potatoes and salad.  Did you know that there are white sweet potatoes and orange sweet potatoes?  Yams are the orange ones and sweet potatoes are the white ones. My husband sliced them and tossed them in about two tablespoons melted grass fed butter, garlic salt, salt, pepper, basil, oregano, and dill. We roasted them at 400 for about 30 minutes. They were the best sweet potatoes we've ever had. Possibly a recipe coming soon?

So we cooked steaks on the grill...


And that led to a fire outside in the fire pit!
YAY for hoodie and fire weather!  It's finally cool enough for warm almond milk!  Probably one of my favorite fall treats.  1 cup hot unsweetened almond milk, 1 tablespoon pure maple syrup, and 1/2 teaspoon cinnamon mixed together.  Even my little ones like it.

BREAKFAST:

Leftover steak and a fried egg.  My husband sautéed onions and red pepper in the pan while the steak heated up.  Plus a little scoop of salsa that I didn't eat.

GYM:  No exercise on Sunday.  It's a rule!

LUNCH:

Mixing bowl salads.


We use our giant mixing bowls and throw a ton of random things in it.

Mine had baby lettuce, spinach, red pepper, onion, carrots, apples, avocado, pecans, and pulled pork.

I topped it with non-paleo salad dressing.

I just can't help it!  I love this stuff and it's made with canola oil and sugar.  90/10 people!

And after lunch I ate a scoop of coconut butter straight from the jar.


DINNER:

Grilled pork chop (salt, pepper, and rosemary), brussels sprouts, and roasted carrots (dill, salt, evoo @400 for 20mins)


MEAL PLAN #2 (for the week of 10/21-10/28)

Monday- Meatloaf and sweet potato mash
Tuesday- Curry meatballs and cauliflower rice
Wednesday- Zucchini spaghetti and meatballs (going to paleo-ize those meatballs)
Thursday- Beef fajita lettuce wraps
Friday- Out to dinner (The Marine Corps Ball!  Wait till you see my dress...)
Saturday- Pan fried chicken topped with mushrooms and onions plus roasted cabbage
Sunday- Herbed chicken quarters and roasted veggies

I plan on at least photographing all of those meals to stay on track.  They may all not get a daily post though.

Week of Eats and Podcast


A little of what I ate this week…

Pulled pork, paleo pad thai, stuffed acorn squash (ground chicken and salsa), so much sunflower seed butter!, apples and raw almond butter, and ham and egg scrambles. 

How have I do this week on dinners so far?

Monday- Breakfast two fried eggs and bacon- I was so lazy!
Tuesday- Paleo pad thai DID IT!
Wednesday- Asian meatballs I subbed coconut aminos for the soy sauce and almond flour for the panko.  It was delicious!
Thursday- Turkey tacosI burned them in the crockpot!  We ate leftovers.
Friday- Pulled pork and collard greens  This meal was AWESOME.  That might go on weekly!

I’ve been listening to a lot of the balanced bites podcasts and I came across this one today that I really loved.  It talked a lot about body image and composition.  Personally, I’ve been struggling with weight gain and loss all of my life.  The bottom line of the podcast was to nurture your body and be happy with it.  It was exactly what I needed this week.

Better Late Than Never

I worked on this post off and on yesterday and was planning on posting after dinner.  My evening was more hectic than planned.  Dinner was two fried eggs and bacon eaten at the kitchen counter.  Sometimes it just happens that way!

Breakfast:

Southwest Frittata  This is so great leftover.  Plus some cantaloupe.

Gym:
An hour of pilates.  I've been doing pilates for a few months now.  Maybe twice a week on average.  It's taken this long to show any improvement.  That class is HARD and I just yesterday I noticed I could do a lot more than I used to.  It was definitely a good feeling.

Snack:

A snack sized larabar.  These are perfect if you are watching calories... (like me!)

Plus they are perfect for little hands...

My kids love them!

Lunch:

Lunch is starting to become a random mix of everything.  Usually leftovers combined with fresh produce.


Ground chicken, onion, broccoli, spinach, and melted coconut butter on top.

Snack:

I was seriously craving something sweet this afternoon.  I don't buy chocolate often so I eat a lot of dates....


Stuffed with sunflower seed butter.

This will probably mean two posts in one day!  Hopefully this evening won't be as crazy as last night.

Meal Plan #1

This week has been crazy!  Someone had a birthday!

I can't believe he's two!

Some of my eats this week...

Paleo pancakes, random mishmosh leftover bowls, egg scrambles, and meatloaf!

Tina over at Carrots n Cake has been doing weekly meal plans and I've been getting a ton of ideas from her.  Wouldn't it be great if we all did it and got ideas from each other?

MEAL PLAN #1 (for the week of 10/14-10/21)

Monday-  Breakfast for dinner
Tuesday-  Paleo Pad Thai
Wednesday-  Asian meatballs over cauliflower rice (the meatballs will be paleo-ized)
Thursday-  Turkey taco lettuce wraps  (minus the rice)
Friday-  Crockpot pulled pork and collard greens
Saturday-  Steaks, roasted sweet potatoes, and salad
Sunday-  Grilled porkchops, brussels sprouts, and roasted acorn squash

Plus this will keep me more accountable... Right?  Let's see!

Back Home

I didn't give up on blogging!  I'm still here.  We've been in Charleston!

I don't think we ate a single meal paleo!

After coming home we jumped right back in to eating healthy.

Dinner last night:

Half a new york strip steak seasoned with salt and pepper and these brussels sprouts.  Those brussels sprouts were so good I bought another bunch to make it again.  I did use regular yellow onion in place of the shallots.

Breakfast:

Paleo pancakes with chopped pecans and sunflower butter.

Gym:  30 minutes with my personal trainer which entailed lunges, squats, cycling, and wall sits.  No weights just constant movement or what he calls cardio leg days.  We do cardio arm days too.  Plus 30 minutes of incline walking on the treadmill.

Snack:  First honey crisp of the season!


Lunch:  Leftovers.  My other half of the steak and those brussels sprouts.


Dinner:  Pork loin and low and slow sweet potay-tohhhhs!


I also wanted to share something I made my kiddos today.  "Homemade tomato soup".



Everything came from a can but it was all organic and delicious.  Paired with a grilled cheese for them. I did taste a bite and it was delicious!
