Three Favs

Breakfast:  

Leftover meatloaf scrambled with two eggs and spinach.

Gym:  30 minutes with my personal trainer + 30 minutes cardio

Times three no rest in between each but 30 seconds rest after both exercises
Raised leg lunge- Holding two 12lb dumbbells - 15 reps each side
Air squats- 20 reps

Times three no rest in between but 30 seconds rest after the three exercises
Jump squats- 15 reps 20 reps 25 reps
Deadlift- 50lbs bar- 15 reps 20 reps 25 reps
Alternating lunge jumps- 12 reps 16 reps 18 reps

1 minute wall sit

Plus I did the button masher workout.

Those youtube videos are funny!  It gives you the idea though.

Snack:

Larabars might be the hubs and my favorite on the go snack.  We both like the coconut.  Be careful not all of them are paleo.

Lunch:

Three of my favorite paleo meals!  Leftover paleo pad thai, leftover southwest meatloaf, and crispy curried sweet potato coins.  These just might be my top three favorite paleo dishes.

Dinner: 

I ate dinner out so it was unpictured.  Chef salad with ranch.  Not good but not too bad either.

Breakfast Fail

Breakfast:

Ugh I've had one of those days. It started off with a breakfast scramble fail.


I've seen this over at Carrots-n-Cake.  I thought it would be good.

It looked and tasted like dog food.  Blah.  I ate a few bites and dumped it into the trash.  Even LB said "Gucky mama".  He likes anything.  This isn't the first recipe I've tried from Carrots-n-Cake that's been "Gucky"...

Gym:  An hour of pilates this morning.

When we went grocery shopping I told the husband to get me some spinach.  He got me the huge container.

It's just me this week so how in the world am I going to get through all this spinach?

I fried an egg.


I had ground pork defrosted in a defrost bowl and planned to use it in paleo pad thai.

I cooked it with onion, mushroom, red pepper, spinach, and spices.  I used a little for lunch as my fried egg base and saved the rest for dinner.

Snack:

Plaintain chips and kombucha.  Almost like potato chips and diet coke.  Almost.

Dinner:

Paleo pad thai.  It was supposed to be breakfast but I was really craving this.  I made it with my ground pork mixture instead of chicken.  SO MUCH BETTER!

Meal Plan #4

Sunday might be my favorite day of the week. We've been trying harder lately not to schedule anything on Sunday and just spend time as a family.

My favorite part of the day is breakfast.  Probably because on Sunday morning we make extra coffee since we are home to enjoy it.  Plus it's pancake day!

That's the first thing I did this morning when I came downstairs.  I poured myself a cup of coffee.


Then I lit holiday candles and turned on some music (Colbie Caillat on Pandora).


The kids helped me make breakfast and it was pretty chaotic as usual.


I fried up some local bacon.


And we started on chocolate chip dippers.

On Sunday I make a bunch of pancakes for the week to freeze.  My kids love little mini pancakes that we've named dippers.

It's just:

2 cups Kodiak Cakes pancake mix (we like the buttermilk and honey)
1 1/2 cups whole milk
1/4 cup mini chocolate chips

Served with maple syrup, bacon, and bananas.  They inhaled these this morning.

I made myself a new paleo pancake this morning.  My aunt follows my blog and emailed me a variation she tried on my paleo pancake.


1 mashed banana
1 whole egg
1 egg white
1/4 cup almond flour

It was delicious!  It was so much fluffier than my other one.

Are you an impatient pancake flipper?  Those paleo pancakes take some patience.

I break mine all the time.

I topped mine with sunflower seed butter.

I put the nut butter on the top while it's still in the pan/griddle.  It makes it all melty and stuff.

The perfect Sunday breakfast!


Even the pups get pancakes on Sunday!

Saturday-  leftovers
Sunday- roasted chicken with fall veggies

Leftover Tacos and Treadmill Workout

Breakfast:

Leftover taco meat with onion, spinach, and two eggs cooked with coconut oil.

I got a few bites in before LB saw me eating.


Being a mom means you have to share everything!  I usually eat at the kitchen counter in the mornings. Worst mom ever.  I don't like to share.


After I heard "notha bite" a million times I just surrendered the bowl.


Gym:  I got a question about my workouts the other day and I'm working on an exercise page/post.  Until that goes up I'll just be more detailed on my posts.  Today was scheduled cardio.  Normally I run or do the stairmaster.  If you were on twitter this morning you saw that I had zero motivation to go to the gym.  I ended up walking on the treadmill.

When I walk on the treadmill it looks something like this:

Let's call it "The Button Masher" because that's pretty much what you do for 30 minutes.
I walk at 4.2mph the whole time.  Set it at a hard speed.  You can always come down.

Snack:

Y'all I'm addicted.

I've been stuffing my face with turkey all day.  Preparing for Thanksgiving?  That's my excuse.

We never buy lunchmeat anymore because we always have healthy leftovers.  Plus this is what I do with it.

I wasn't overly hungry at lunch time so I just made a small taco salad.

More leftover taco meat (that was the last of it!), leftover lettuce, salsa, and avocado.

Dinner:

Roasted herb chicken quarters with fall veggies.  I did equal parts dried oregano, dried basil, fresh rosemary, and salt.  Maybe 2t each?  Plus a pinch of sage.  Depends how many quarters you have.  Plus 2T melted coconut oil.  Carrots, sweet potato, butternut squash, onion, two cloves of garlic, and one cup of chicken stock on the bottom. Baked at 325 for 2 hours covered and then broiled at 500 for 15 minutes uncovered.  I'm terrible at making recipes but this deserves one!

Groceries and Eats

I'm new to twitter.  It's confusing!  Did you guys see my tweet yesterday?


I sent the same message to my hubs.

We seriously needed to go grocery shopping.

We got our two weeks worth of meat and random things.  Plus a weeks worth of produce.

We got:
2 packs of local bacon
2lbs natural ground turkey (They don't have organic?  Weird.)
2lbs grass fed ground beef
2lbs local ground pork
2lb grass fed eye of round roast
3lb local pork shoulder
2 gallons of whole milk (for the kids)
Organic half and half (for our coffee)
Grass fed butter
Grass fed whole milk yogurt (for the kids)
32 eggs
Local honey
Organic chicken stock
Salsa
Organic tortillas (kiddos)
Kashi waffles (kiddos)
Kombucha

The husband went on a mini vacation yesterday and needed breakfast and lunch packed.  I figured this would be a good everyday list of some on the go snacks.

Here's what I packed him:

Pistachios, a throwaway/recyclable water bottle (so he doesn't have to keep up with his), strawberry kombucha (check out his first kombucha drink- he didn't like it at all), clementines, mixed fresh fruit, 1/2lb of turkey, beef jerky, and a larabar.  The turkey he was going to eat for breakfast so we didn't need to worry about it keeping cold.

Breakfast:

You guys guessed it.  A paleo pancake.  One egg mixed with 3/4 mashed banana.

1t coconut oil in a pan with the pancake mix.


Covered in toppings!

Sunflower seed butter, 1/4 banana, coconut flakes, flaxseed, and pecans.

Gym:  Chest press, machine fly, pushups, cable fly- 20 reps 4 times.  Plus 20 minutes of cardio on the treadmill.

Lunch:

Eaten out at a hibachi restaurant.  I ordered the chicken hibachi with double veggies instead of rice.

Dinner:

Tacos lettuce wraps.  1lb ground turkey with 2 tablespoons taco seasoning.


Homemade taco seasoning.


Wrapped in lettuce topped with avocado and salsa.  I ate 4 of them!
