Just Some Things

Just a bit of randomness today... 

• Did y'all see on Mark's Daily Apple the article on co-sleeping today?  I was always the paranoid mama that did everything by the books.  I didn't co-sleep with my kids.  Now I'm kind of wishing I did.

We unwillingly co-sleep with our two and four year old... Does that count... cuz we do that!

• The husband found another egg today.  Our girls are on a roll!


What to do with fresh eggs?


Paleo mayo of course!


• Waking up an hour after your alarm makes your whole day chaotic. It means lousy pictures.


It also means your breakfast is to go!

No the pineapple juice does not mask the coconut water flavor.  It still tastes just like coconut water.



I can't believe tomorrow is Friday!  Tomorrow's five favorites will be paleo meals!

An Egg!

The past few weeks have been a bit stressful for me.  I've been busy planning out my next 7 months or so.  If you are military you know exactly what I'm talking about.  A few weeks or a few months before your spouse deploys you start planning out the time you'll be apart from them.  I've planned it down to what we are going to do each day.  I've also spent the past few weeks on a roller coaster ride of emotions.  I'm excited.  I'm nervous.  I'm sad.  I'm furious.  I'm scared.  I'm anxious.

Needless to say there have been quite a few meals unpictured and it's obvious my focus hasn't been here at COP.  It's been on my family.  I promise that here in another week or so I will come back to the regular rhythm of posts and have better content.  Bear with me for now.  Especially with this post...

My chickens heard my pep talk the other day.


Look what I found in their nesting box this morning...

By little I mean little!  It's so tiny!


Apparently, the eggs get bigger as they lay them.  Not too shabby for your first egg girls!


Did you know that chickens take dirt baths?  It protects their feathers from parasites.


Having chickens has really taught me a lot about the animal and about eggs.  I love learning where my food comes from!

RECIPE: Salt and Vinegar Cabbage

Since we started increasing veggies in our diet I've tried a variety of new foods.  One new food I've tried is cabbage!  The only way I've ever had cabbage is in coleslaw.  Isn't that crazy?! Cabbage has quickly become one of my favorite vegetables... but only if it's cooked this way!




Salt and Vinegar Cabbage
Keep your cabbage and onion in the same size category.  If you can only find a small cabbage get a small onion.

1 medium head of green cabbage sliced into thin strips (think coleslaw!)
1 medium onion sliced into thin strips
2 tablespoons ghee or grass fed butter- divided
1 teaspoon of salt- divided
Apple cider vinegar and red pepper flakes to taste.

Melt one tablespoon of the ghee in a large pot over medium low heat. When it melts add all of the onion plus a half a teaspoon of salt. Sauté until just soft. Add your cabbage, the other tablespoon of ghee, and the other half teaspoon of salt. Cover and cook until tender stirring frequently. It usually takes about 20 minutes. Garnish with red pepper flakes and a drizzle of apple cider vinegar.


You could also use coconut oil as the cooking fat but I feel that the ghee or butter is what makes this side dish so rich and almost sweet.  Pair it with pulled pork or add it to a stir fry.

The Classics (In My House)

Since starting paleo it seems like we eat such a variety of things. It is still pretty new to me so I am constantly trying new recipes. It seems as though we never eat the same thing twice anymore! I thought it might be interesting to do a classics post. Not a "my favorite paleo meals" post (hint for Friday!) but just some things we eat on a regular basis. So today I ate all of our classics.

Breakfast:

DUH.  Y'all should have seen that one coming.  My classic paleo pancake with sunbutter, salted cinnamon coconut chips, and banana.

Gym:  Legs!  I did a classic (for me) leg workout.  Extensions on the machine with 20 walking lunges holding 20lb dumb bells x3 sets.  Plus the glute machine with 20 air squats holding those dumb bells x2 sets.  And then the leg press machine- 7 normal presses, 7 super slow, 7 upper half, 7 lower half x2.  Plus 30 minutes of the stair climber.

Lunch:

Hamburger helper with broccoli and carrots sautéed in coconut oil.  Plus avocado on top.  I've been eating this a lot lately.  Sometimes with egg in it.

Sometimes with sunshine sauce on the top...


We keep a jar in the fridge at all times.  It goes with everything!


Dinner:

Paleo pad thai.  This is a staple in our house!

On Board

We got so many things accomplished this weekend!  Before the hubs leaves he has a long list of things to do.  Between last weekend and this one we got it all done!

All four dogs even got a bath. That's a huge accomplishment. Especially since I bathed all four myself.

I got all of my meal planning done for two weeks this morning.

We had a restless night with the kids last night so I was up early while everyone else slept in.

We also got this weeks Starbucks/Whole Foods shop done.  Our last one together for 7 months.  Ugh time is going too fast.

It seems to be our thing... The Starbucks and then Whole Foods.  I'm going to miss it.

I've hopped on board with prepping on Sunday.  It seems like everyone else is doing it so I was feeling a little left out!

I spent most of the afternoon prepping!  It was kind of a lot of work but I'm sure it will be worth it later this week.

I made hamburger helper.


I riced cauliflower.  I didn't cook it yet.


I chopped broccoli and carrots.


I also did all of our peppers and onions.


I washed berries and put them in containers.  I go ahead and wash them because we eat them so fast.  They don't stand a chance to get moldy in our house!


I roasted a spaghetti squash.


I cleaned kale.


And hardboiled some eggs.
