Pancake Rut

Y'all I'm in a little bit of a rut.

I eat too many pancakes.  I had one this morning for breakfast.

Gym:  30 minutes with my trainer.  We used cables and did back the entire time.  It was HARD.  I'll be sore tomorrow for sure.  Plus 30 minutes on the stair master.

Lunch was a salad eaten out and I forgot to photograph it.

I didn't forget to take a picture of my coffee though!

Priorities people.

I also caught myself on camera sneaking in a treat.

A heath bar cookie.  Ugh.  I felt bad eating it but I think it might have been worth it!  I haven't had a cookie in awhile.

Dinner:

Both of my kids napped this afternoon so I made most of our dinner around 3:00.

I baked chicken, chopped broccoli, and roasted a spaghetti squash.

There has got to be an easier way to cut a squash in half.  Anyone got any ideas?

I also made sunshine sauce.
 

Paleo pad thai for dinner.  One of our favorites!

Since it's fall I've been seriously craving a pumpkin muffin.  I've been splurging on pumpkin spice lattes once in awhile but can't bring myself to eat a muffin.

I tried this recipe last night for pumpkin cake bars.

I didn't have the ingredients for the icing but they didn't need them.  These were AWESOME.

The kiddos liked them!

Fall Foods

Breakfast:
 
Pumpkin paleo pancake- 3/4 banana mashed with an egg, 1/2t pumpkin pie spice, and 1/4c pumpkin.  Cooked in coconut oil and topped with the rest of the banana, sunflower seed butter, and flaxseed.

Plus coffee with a small splash of half and half.


Gym:  an hour of pilates

Snack:

A handful of leftover roasted sweet potatoes.  Maybe half of a medium sweet potato?

Lunch:

Leftovers from the other night.  Collard greens, chicken, and cooked carrots.

Dinner:

I started dinner earlier in the day.

I used this recipe as a guideline to roast some chicken pieces and random veggies.


I chopped up a sweet potato, a whole butternut squash, one garlic clove, and a small onion.  I tossed them with baby carrots, some leftover mushrooms, fresh rosemary, dried basil, dried sage, dried oregano, melted coconut oil, salt and pepper.  I did the same coconut oil, herb, salt, and pepper mix on the chicken.  I put everything in a roasting pan with a cup of chicken stock.  I covered it with foil and baked it at 325* for 2 hours.

After an hour I stirred all the veggies around and covered it back up and put it back in the oven.


After 2 hours I took the temp of the chicken (it was 170*) and then put it back in the oven at 500* for 10 minutes.


Crispy skin!


This was amazing you guys.  I'll have to write down exact ingredients next time.

What is your favorite fall food?  Mine has got to be pumpkin spice lattes and pumpkin muffins.  Which I can't eat now! I really am loving squash this season though.

Meal Plan #3

Today has been pretty uneventful for us.  It hasn't been as rainy as yesterday but it's been cold and gloomy.

Breakfast was a paleo pancake.

Just a banana mashed with an egg cooked in coconut oil.  Sunflower seed butter, more banana, and coconut flakes on the top.  Typical.

We made a trip to Whole Foods just because we needed coconut oil.  We really use any excuse to go to Whole Foods...  It might sound silly but it's one of our favorite things to do.  Plus we usually hit up Starbucks which is another thing we love to do.

Today is lacking in pictures.  It happens.

The husband is going to be gone for training starting this Thursday so my meals will be a little hit or miss.  I'm still going to try to stick to a meal plan.  It just won't be as elaborate.  Saturday and Sunday will probably be leftovers of some sort.

Marine Corps Ball


We had a great time at the Marine Corps Ball!


It is a lot of fun getting so dressed up.

We woke up this morning to tropical storm Sandy.  We live in Wilmington, NC so we've dealt with the storm all day.

This is what we've pretty much looked like all day...


We did manage to get a workout done at the gym.

I had a mini larabar and splash of coffee beforehand.


We did some poor planning because we didn't get out of the gym until 10:45.  We planned on eating brunch but by the time we got home it was around lunch time and we were starving.

The husband made a huge scrambled with eggs, ham, bacon, spinach, onion, and avocado on top.

Dinners on the weekend are usually pretty elaborate.


One of my favorite things to do with my husband is cook with him so our weekend menus are always good.


Chicken (seasoned with dried herbs, salt, and pepper) sautéed with mushrooms and onions, collard greens, and crispy curried sweet potato coins.


Those potatoes were so good but... they were SO salty!  I will definitely be making them again but omitting most of the salt from the seasoning mix.  The husband sautéed the chicken and mushrooms in the same pan and then deglazed the pan with chicken stocking making a little bit of sauce for the top.  It was delicious!

Taco Wraps

Seriously Kristen what have you done all week long? Why is it that when you don't have anything planned everything comes up?

Here's a few things I've been eating this week:

Breakfast scrambles (whatever we had for dinner mixed with eggs), beef tacos, dessert (dates and coconut flakes), curry meatballs with cauliflower rice, and paleo pancakes.

I've been battling a sinus thing so my appetite has been a little low.

I've eaten a few paleo pancakes for dinner.

Our favorite dinner this week were taco wraps.

We just put an eye of round roast in the crock pot with peppers, onions, and taco seasonings.

Then we wrapped it in boston lettuce and added guacamole, salsa, and caramelized onions.


I ate four of them they were so good!


We've got the marine corps ball tonight and a busy weekend planned.

Ma! The Meatloaf!

I have to share our dinner from last night. It's one of our favorites.

Topped with 1/4 of an avocado.

Plus I made mashed sweet potatoes.

I know y'all... You are thinking that looks effing gross.  It was delicious and my kids even ate it!

It was two white sweet potatoes and one orange sweet potato (that's what made the gross color) boiled in water.  I smashed them using my stand mixer and added a couple tablespoons of grassfed butter, some chicken broth, and salt.  I sprinkled cinnamon on mine.  The husband put hot sauce on his.

I doubled the meatloaf recipe and made a ton of sweet potatoes so we had leftovers.

Dinner for the hubs (he's rarely home in time for dinner), lunch for him, and lunch for me.  Meal planning in action!

BREAKFAST:

Two ingredient pancake with sunflower butter.

Plus coffee.  I drink coffee every morning with a little splash of the kids organic whole milk.


GYM:
30 minutes with my personal trainer (arms) + 30 minutes on the stair climber.

SNACK:

1/4c of sweet potato mash with cinnamon and probably 1/4t of maple syrup.  This was so satisfying after a tough workout.  I might start keeping mashed sweet potatoes in the fridge!

LUNCH:

Leftover meatloaf, 1/4 avocado, and sweet potato mash (no maple syrup this time!).

Looks to me like sharing last night's dinner might be a trend.  We'll see!  Tonight I'm taking some pictures for a friend so I'll have to share tonight's dinner tomorrow.

Meal Prepping



I might be new to paleo but one thing I've learned about it is that it's tricky.  If you aren't prepared for it you won't succeed.  I've always been big on meal plans but eating a paleo diet has definitely made it a must.  I plan every single dinner.  I also have a defrosting schedule.  Not only does this help me keep my sanity it saves us money.



Anything that comes out of the freezer goes into our defrost bowls in the fridge and is ready to use when I need it.


We go grocery shopping every weekend. The first shop is always the big one. We buy all the meat we need for two weeks plus any odds and ends like butter, coconut oil, nuts, and stuff for the kiddos.  The second is just a refresher and usually involves tons of produce and the random things we forgot the week before.

This Saturday was just a refresher. It looked something like this:


Acorn squash x 2
Spaghetti squash
Apples- a whole bag
Grapes
Whole wheat organic pasta (for the kiddos)
Red peppers x 2
Coffee x 2
Sweet potatoes x 4
Grass fed butter
Pears x 5
Avocados x 5 (some ripe some not for later this week)
Onions- a whole bag
Spinach
Baby Lettuces
Carrots
Bananas
Zucchini x 4

When I get home I get busy (usually in my pajamas )


I chop onion.
 

Then I put it in a reusable tub so I can easily add diced onion to anything.


I double check the defrost bowl to make sure I have the meat in there for the first part of the week.  I wash most of the produce.


I hard boil eggs and usually make a frittata for breakfasts.


There are also many times where I prep dinner or other meals during the kids nap time.


All this meal prepping might sound crazy but it keeps us prepared.  I love planning meals and making sure we have all the ingredients for it.
