In Action

Ok so let's put all that meal prep into action. Here's what I ate today:

I always start with coffee with almond milk first thing in the morning.


Meal 1- 7am

Two eggs and spinach cooked in coconut oil.  Plus a banana.

Meal 2- 10am 

Right after the gym I drink a protein shake.

Meal 3- 12pm

Chicken, broccoli, sweet potato.

Meal 4- 3pm

An apple

Meal 5- 6pm

Turkey, sweet potato, broccoli, carrots

Meal 6- 9pm

That other protein shake.

What's your day like with meals?  Do you eat at certain times or just whenever you feel hungry?

Whole30 Day 20-23

All weekend I kept meaning to do a blog post.  It just never happened.  You guys probably know how that is.  I've pretty much been eating the same things anyways.  Yesterday I did some meal prep so I figured I'd share it with you.  I've been working on a post about macros so I'm not going to get into that here but I can show you what I do to meal prep it!

Yesterday I made my list:

That is every meal for three days.  If you want to know it's 1,300 calories and is 41% protein, 40% carbohydrates, and 19% fat.

That meal plan is so simple!  All I needed to cook was chicken, turkey, sweet potato, broccoli, and carrots.  I make breakfast every morning.

I made the chicken and turkey in my crockpot.  A couple hours on low.


Then I set the oven for 400 and roasted the broccoli and carrots.  I also threw a couple sweet potatoes in too.


Seriously... It was that easy.

When everything was done I got out my containers, food scale, and measuring cups.


Lunch and dinner for three days.


Lunch- 4oz. chicken breast, 1/2c broccoli, 1/2c sweet potato.


Dinner- 3oz. turkey breast, 1/2c broccoli, 1/2c carrots, 1/2c sweet potato.


Honestly it tastes like it looks... A little bland and boring.

I did and do season things with Mrs. Dash seasoning.  The ingredient list is clean!  Surprisingly!


And pretty much put mustard on everything... Also, clean!


That looks much more exciting.  Kinda.

Whole30 Days 18 and 19

I just want to say regarding my last post... I don't think counting macros is a lifestyle and I know it can become obsessive.   Especially for someone with minor OCD like me.  I'm trying to stick to 40% protein, 40% carbs, and 20% fat.  That's pretty basic and a good place to start.  We'll see how it goes!



My meals for the last two days have been exactly the same.  Really it's been nice.  Three days in a row eating the same thing isn't bad.  Plus I've had more time to focus on what the kids are eating.  It seems like I'm putting my creativity towards that instead of myself.  Benefits all around...

Breakfast:

One egg, one cup egg whites, one cup of spinach cooked in a teaspoon of coconut oil.

Lunch:

4oz asian chicken thighs, broccoli, and 4oz sweet potato.

Dinner:

4oz grass fed beef, mashed cauliflower, and steamed broccoli and carrots.

Since I ate the last of my meals today I made more for the next three days.


Everything's set!

Whole30 Day 17

Whew alright things are taking another "change of pace" around here.  I was informed that I really only have two more months... See... I haven't been counting down the days until my husband comes home.  Honestly I don't even think about it because it can become obsessive and disappointing.  So when I found out it would be about 60 days I kind of freaked out.  Am I happy with the way I look?

Y'all might start to think I'm crazy.

"Gawd Kristen's husband needs to appreciate her!  He should love her the way she looks because she looks HOTTTT."  

Well... there are two good things about deployments.  1- well... more money and 2- getting hot while your man is gone!

Let's make this clear.  I know I'm not overweight and I'm not obsessing over this... for long... I just want to look amazing when he sees me for the first time in 7 months.

So here's what I've got to lose:


In order to lose whatever I can I'm tracking calories again, meal prepping, and doing more HIIT training at the gym.  
Honestly, I've missed meal prepping!  Yesterday was awesome because I just reheated my meals!  On Sunday I only made three days worth though instead of making five.  I think that will be the key so I don't get burnt out.

Breakfast:

Two eggs, two egg whites, spinach, and garlic cooked in coconut oil.

Lunch:

4oz asian chicken thighs (from nom nom paleo), broccoli, and 4oz sweet potato.

Dinner:

4oz. grass fed beef, mashed cauliflower, carrots, and broccoli.

That doesn't include two protein shakes... I know they aren't whole30 but I do just fine with them.  I had one after the gym and one before bed.  I'm not sure the one before bed is necessary.

Be patient y'all while I figure this out.  My meals my be up and down and a little random.  

Would you want to look hot for your wife/hubs gf/bf if you hadn't seen them in 7 months?

Whole30 Day 14, 15, 16

Umm... Where did I leave off?

 Oh yeah our stomach bug that has now turned into an endless fever.  What in the world y'all.


The past few days have been crazy.  Aren't they always?  It's felt like it's been months since I've blogged.  I have literally thrown food on my plate not even knowing what it was.  All of it has been Whole30 compliant but none of it has been thought out.

Here's what I've been eating...

Yesterday is when my stomach actually started feeling better.  Crazy how a stomach bug can ruin so much!  You can tell I'd feel pretty good in the morning and then things would get worse.  I've pretty much lived off smoothies for the past week.

Yesterday was Father's Day!  I felt like it went by too fast but I did get to spend it with my dad and we got to FaceTime with the hubs.  Ugh I miss him.

What did you do on Father's Day?  Anything special?

Whole30 Day 11, 12, 13

Holy cow yesterday sucked.  I came down with some kind of stomach bug and was literally couch bound all day on Wednesday.  Have you ever tried to entertain a four year old and a two year old from the couch?  It's nearly impossible.  They watched endless tv and I don't think they even had a real meal yesterday.  I just dumped snacks into bowls and went back to the couch.  Poor parenting?  Maybe... but I was down.  Like I didn't want to move.  The kids and I got a bad stomach bug on the last Whole30 I did.  Coincidence?  Who knows.  So here are my eats from the past few days.

Day 11

Breakfast- Smoothie with cherries, kale, cashew milk, chias, and banana.
Lunch- To go!  Two hardboiled eggs, half an avocado, and homemade mayo.  Plus roasted carrots and olives.
Dinner- Coconut shrimp and roasted carrots.

Day 12 (my sick day)

I ate these randomly throughout the day.  Smoothie with cashew milk, banana, and sunflower seed butter.  Cashews, raisins, and one of the kids applesauce packs.  Coffee and a banana.  I've been wanting the same thing when I get sick.  Cashews and bananas.

Day 13
I woke up feeling much better but my belly still isn't right.  Today was hit or miss with food.

Breakfast-  Smoothie made with cherries, kale, banana, chia seeds, and cashew milk.  Plus one scrambled egg in coconut oil.  This felt good on my belly...
Lunch-  A coconut Larabar and some go raw pizza flax snax.  Those little guys are GOOD!  Expensive but good.   
Dinner-  Applegate farms grass fed burger with paleo mayo, bacon, a fried egg, and avocado.  Plus sweet potato fries.  This did not feel good on my belly.

Whole30 Day 10

Breakfast:

Smoothie- cherries, banana, almond milk, chias, and kale.  It looked like mud but tasted delicious.

Plus a snack pack of olives about an hour later.


Lunch:
Y'all I cheated... Well kind of?

I took squirrel to get her ears pierced...

She was determined to do it so I took her.  It was pretty traumatic but she was good a second later.

Since she was so good I took her to chick-fila for lunch.  I was starving and didn't plan well.

I don't like salads but it was the only almost whole30 option.  I got the closest stuff I could and picked around the blue cheese.  I was hungry like two seconds after eating this... One of the reasons I don't like salad.  They aren't satisfying.

When I got home I snacked on some cashews.

Dinner:

I got some ground goat a couple of weeks ago from the farmers market.  The butcher told me to use it just like beef... So I did.

I made a southwestern frittata with kale.


I ate a double serving with fresh salsa and avocado.  The goat is good!  It does taste slightly goaty but it's good!

Plus endless watermelon for dessert!

Whole30 Day 9

Breakfast:

Calm down Whole30 police.  It's Sunday and I wanted pancakes.  It's OK.  This was the almond flour recipe with 1/4c of blueberries added.  Plus coconut butter on top.  I already told myself I wasn't going to be as restrictive this time around with my pancakes.  I miss them... mmmk?

Lunch:

Leftover pork burgers with caramelized onions, mayo, and avocado.  Plus green beans.  Those little burgers are so good with that mayo and those onions... and that avocado.  The combination is amazing.

Snack:

Cherry chia smoothie... recipe coming soon!

Dinner:

It summertime!

I skipped the corn this time.

And ate endless chicken legs and a big ol' sweet potato!

I love the sweet berries and being able to cook everything outside.  Less clean up!

Whole30 Day 6, 7, 8


Breakfast:  Coconut milk, chias, salted cinnamon coconut chips, banana, nuttzo.
Lunch:  Hamburger helper, cauliflower rice, kale, and avocado.
Dinner:  Tilapia tacos on cauliflower tortillas topped with salsa and avocado.  Plus sautéed veggies.  


Breakfast:  Smoothie made with cherries, almond milk, almonds, banana, chia seeds, and a raw egg.
Lunch:  Lazy girl lunch- Kraut and hot dogs cooked on low in the crockpot for a bit.
Dinner:  I snapped a picture of my dinner with my phone last night and somehow it's gone.  Who knows.  I had a burger and a sweet potato.



Breakfast:  Egg scrambler- two eggs, kale, peppers, onion, broccoli, and avocado.
Lunch:  Leftovers.
Snack:  Smoothie!  Recipe soon!  
Dinner:  Pork burgers topped with paleo mayo, caramelized onions, and avocado.  Plus a sweet potato topped with coconut butter and cinnamon.

So I finally broke out my hand blender to make some mayo for those burgers today... Umm hello???  What took me so long to try this?

This was done in like five minutes.

So my appetite has been really weird lately.  I haven't been hungry at all in the morning.  As you can see my breakfast have been small and when I do make a big breakfast this is what it ends up like-


I definitely go through hormonal changes during the month.  One week I'm not hungry at all and then the next I want to eat everything!  I've noticed it more and more by doing these Whole30's.  Isn't that what this is all about?  Learning about your body's relationship with food?

Whole30 Day 4 and 5

I'm trying to organize these posts as well as I can. I'm trying to keep pictures and writing to a minimum because I know I personally don't like to read lengthy posts. Hopefully this works!

So I've been distracted the past few days with this little guy:

I got a new car! Ever tried to buy a car in your husbands name while he's not here? It's a lot of fun... Let me tell you.


Day 4- paleo pancake topped with salted cinnamon coconut chips, Nuttzo, and banana
Day 5- hamburger helper, sweet potato, and an egg


I am LOVING grated sweet potato pan fried in coconut oil.  Ahhhh heaven y'all!


Look how crispy it is!


Day 4- hamburger helper topped with avocado
Day 5- a whole can of tuna packed in olive oil mixed with half an avocado, roasted sweet potato, and two peaches


I made little sandwiches!


Day 4- hamburger helper, grated pan fried sweet potato, and an egg
Day 5- more hamburger helper mixed with extra kale and cauliflower rice

I've had a really good couple of days you guys!

I found this snack at the store.  AHHHHH.  I need more NOW.

I noticed I don't want starch some weeks and then other weeks I'm really into starches.  This week I'm obviously a fan because I've been eating sweet potatoes with everything.

As I'm finishing this post I don't like the layout.  I like posting every other day though.  I'll organize this better.
