RECIPE: Paleo Bacon Brussels Sprouts

This is one of my favorite side dishes.  It's simple, flavorful, and looks kind of fancy!


Bacon Brussels Sprouts

1lb of brussels sprouts stems trimmed and halved
3 strips of good bacon diced
1/4 cup chopped onion
1 garlic clove minced
1 cup of chicken stock
Salt

Cook the bacon in a sauté pan until crispy and then remove it from the pan.  Cook the onion in the leftover bacon grease until soft.  Then add the garlic and brussels sprouts.  Let the brussels sprouts cook until they just start to get soft.  Then deglaze the pan with the chicken stock scraping up all of those lovely bacon bits.  Put the lid on a let simmer for about 20 minutes or until the brussels sprouts are tender.  Garnish with the bacon and salt before serving.

If I liked bacon, I'd totally be on board . . . but brussels sprouts are one of my very favorites!! Just bought a whole bunch today because they were on sale for 88 cents/lb!!! Yay!

I really like brussells sprouts and this looks great. I put banana into my pancakes today, and the jury is out. I may just need more banana to give it more flavor.

@Michelle @ Eat Move Balance OMG. You don't like BACON?! What??? You could use ham...? or just skip it all together and use coconut oil! My favorite part of this recipe is the cooking method. To me roasted brussels sprouts seem dry and steamed are slimy. This lets you control how done they get and they get a ton of flavor from the chicken stock!

A year ago I would never think that I would be saying this (I wasn't exactly the healthiest eater then), but I seriously LOVE brussel sprouts. They are so delicious. I especially enjoy them roasted!

Yum to the yum. You KNOW I will make this very soon. I usually buy bacon once in awhile for a wee splurge. I love the applewood smoked from WF.
Bacon adds so MUCH flavor to food. I love how you only need a small amount to up the taste factor.

Yum! I wonder if adding a bit of pure maple syrup would give it that sweet/salty effect?

Oooh my bf doesn't really like brussels sprouts (he grudgingly eats the ones I make and says they're okay.. which is a huge compliment because usually he won't even touch them if someone else makes them!) but he LOVES bacon... I'll have to make this for him!

I have been doing a lot of shaved Brussels, but this week I was planning on doing a similar dish to this one, but with Pancetta instead of bacon. Looks divine...thanks for sharing
