RECIPE: Paleo Coconut Shrimp



Paleo Coconut Shrimp

15 medium shrimp cleaned
1/2 cup almond flour
1/2 cup shredded unsweetened coconut
1/2 teaspoon salt
2 beaten eggs
1/4 cup coconut oil

Melt the oil in a pan at medium heat.  Mix the almond flour, coconut, and salt together in a shallow bowl.  Bread the shrimp by dipping each one into the eggs and then the almond flour/coconut mixture.

Fry until both sides are golden brown.

I also made a dipping sauce consisting of 1/4 cup full fat coconut milk and 1/4 cup crushed pineapple.  I made it ahead of time and left it in the fridge for a few hours.

I want those shrimp again right now!

You really have stuck with it. Good for you. That breakfast does sound delicious. Especially when you said you added the shredded coconut and used the end of a seed-butter jar. Yum!

Wait, we aren't supposed to eat bacon?? I think I've had some over the past month...whoops! I'm so sorry LB is sick :( So terrible. Being on your own without your husband has got to add a whole other layer of stress too. Last day tomorrow. It's hard when you're up and down all night, having to have the energy to deal with the kids during the day and thinking about what you're going to eat on top of it all. If you can't make it to the gym tomorrow, work up a sweat at home. There are plenty of things you can do....I'm a walking billboard lol.

Hang tough mama!! You are my hero.

Will you be continuing come May 1? You've done great whatever you choose. I was up all Saturday night with our 2 year old, throwing up every hour and a high fever. It was the worst. Yesterday all she did was sleep on me...thankfully today she was on the mend.


And I love coconut shrimp!

Well I haven't eaten bacon because it usually has sugar in it to help the curing process. I couldn't find one without it. It's the tiniest bit of sugar. It's hard to workout at home especially when they require all of my attention. I do walk though! :)

Fantastic idea on that dipping sauce! Not sure if this is paleo-friendly or not (I think it is) but I love doing my coconut shrimp with popchips run through the food processor, makes a great crispy coating. Good on chicken nuggets too!

I would have never thought to combine eggs with banana, pumpkin, cinnamon, coconut and sunflower seed butter! I'm not even sure that it sounds good, but you have me curious now!

Ahhhh, got it on the bacon. Honest mistake. Didn't even cross my mind. I'm still claiming success on my Whole30.
